As the United States entered the Great Depression, a Chelsea housewife named Mabel Holmes created a baking mix that anyone could use regardless of cooking skill. Named Jiffy Biscuit Mix, this product launched in 1930 and introduced the world to convenience food and baking mixes. Benefiting the area’s milling heritage, Chelsea Milling remains family-run and continues to introduce trailblazing products to a global market. Highlighted by Forbes in 1990, Jiffy comprised 14% of biscuit, muffin, and cake mixes and 50% of muffin mixes for sale. By 2000, Fortune reported the company led sales in muffin mixes at 55%.
